my partner and I are building a house and getting a 28x8.5 shell built.
the plan is to put the bathroom at one end and the kitchen at the other to maximize the layout

Since we’re finishing the interior ourselves, what should we be thinking about for plumbing?
is running pipes 28 feet across the house a nightmare for drainage or venting? Need some tips and advice on how to plan the lines before the shell arrives?

Since you are finishing the interior yourself, your primary goals are ensuring water moves out effectively, or the drainage and also preventing odors/suction through venting.
Have you considered having two separate exit points? One for the kitchen and one for the bathroom? That you join together with an external Y-pipe once you are parked. This eliminates the need to run a sloped pipe the entire length of the trailer. Just a thought.

yeah, venting that distance is the tricky part. no need running a massive vent pipe all the way back to the main stack, try to look into AAVs for your kitchen sink
they allow the drain to breathe without needing a hole in your roof at both ends of the house
